Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold, cut into cubes
  • ¼ cup sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup sugar
  • 3 eggs
  • ½ cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • ½ cup heavy cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and water, mix until dough forms.
  3. Press dough into tart pan. Bake for 15 minutes. Let cool.
  4. For filling, whisk together sugar, eggs, lemon juice, and zest. Stir in cream.
  5. Pour filling into crust. Bake for 15 minutes or until set. Cool before serving.
