Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
Add the egg yolk and cold water, mix until the dough comes together. Press the dough into tartlet pans.
Bake the tartlet shells for 15 minutes or until golden brown. Let them cool.
In a saucepan, combine lemon juice, lemon zest, sugar, and eggs. Cook over medium heat, stirring constantly, until thickened.
Remove from heat and stir in the softened butter until smooth. Pour the lemon filling into the cooled tartlet shells.
Chill the tartlets in the refrigerator for at least 1 hour before serving.
