  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup shredded zucchini
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 2 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat together sugar, eggs, and oil until well combined. Add lemon juice, lemon zest, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded zucchini.
  5. Pour the batter into the prepared loaf pan. Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
