Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 medium Carrots chopped
  • 2 stalks Celery chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 2 cups Spinach fresh, chopped

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil and sauté the onions until they are translucent.
  2. 2. Add the garlic, carrots, and celery. Cook for about 5 minutes, stirring occasionally.
  3. 3. Stir in the cumin, paprika, salt, and pepper. Cook for another minute.
  4. 4. Add the lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the lentils are tender.
  5. 5. Stir in the spinach and cook for another 5 minutes until wilted.
  6. 6. Adjust seasoning if needed. Serve hot.
