Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Water
  • 1 Avocado diced
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Fresh Cilantro chopped

Instructions 

  1. 1. Rinse lentils under cold water.
  2. 2. In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender. Drain and let cool.
  3. 3. In a mixing bowl, combine cooked lentils, diced avocado, cherry tomatoes, red onion, olive oil, lemon juice, salt, and black pepper. Toss gently to mix.
  4. 4. Garnish with fresh cilantro before serving.
