Main Ingredients
- 1 cup lentils rinsed and drained
- 1 medium onion chopped
- 2 cloves garlic minced
- 2 stalks celery chopped
- 1 can diced tomatoes (14.5 oz)
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- 2 tablespoon olive oil
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions, garlic, carrots, and celery. Sauté until vegetables are tender, about 5-7 minutes.
3. Stir in cumin and paprika, cook for another minute.
4. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 30-35 minutes or until lentils are tender.
6. Season with salt and black pepper to taste. Serve hot.
