Ingredients 

Main Ingredients

  • 1 cup dry lentils rinsed
  • 4 cups fresh spinach chopped
  • 1 cup cherry tomatoes halved
  • ½ cup red onion thinly sliced
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Cook the lentils in a saucepan with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked lentils, spinach, cherry tomatoes, and red onion.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. 4. Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate for later.
