Main Ingredients
- 1 cup Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 cups Vegetable Broth
- 1 cup Diced Tomatoes canned
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 2 tablespoon Olive Oil
- 2 cups Spinach fresh
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, cook until softened.
3. Stir in the cumin and paprika, cook for another minute.
4. Add the lentils, vegetable broth, diced tomatoes, salt, and pepper. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 30-35 minutes until lentils are tender.
6. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
7. Serve hot and enjoy!
