Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil.
  2. 2. Add the chopped onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Stir in the cumin and paprika, cooking for another minute.
  4. 4. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat to a simmer, cover, and cook for 30-35 minutes, or until lentils are tender.
  6. 6. Season with salt and black pepper to taste. Serve hot.
