Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 lime, juiced and zested
  • ½ cup fresh cilantro, chopped

Instructions 

  1. 1. Rinse the rice under cold water until the water runs clear.
  2. 2. In a saucepan, bring water to a boil. Add the rice, olive oil, and salt. Stir well.
  3. 3. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.
  4. 4. Remove from heat and let it sit, covered, for 5 minutes.
  5. 5. Fluff the rice with a fork. Stir in lime juice, lime zest, and chopped cilantro.
