Instructions
Peel the lemons, avoiding the white pith.
Place the lemon peels in a jar and pour the vodka over them. Seal the jar.
Let the mixture infuse for 7 days at room temperature.
After 7 days, strain the lemon peels from the vodka.
In a saucepan, combine the sugar and water. Heat until the sugar dissolves to make a simple syrup. Let it cool.
Mix the simple syrup with the infused vodka. Bottle the limoncello and refrigerate.
