  • 2 cups diced potatoes
  • 1 cup cooked sausage, crumbled
  • 4 eggs
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add diced potatoes and cook until golden brown, about 10 minutes.

  4. 4. Make four wells in the mixture and crack an egg into each well.
  5. 5. Cover the skillet and cook until eggs are set, about 5 minutes.
  6. 6. Sprinkle shredded cheese over the top and cover until melted, about 2 minutes.
