Main Ingredients
- 2 cups diced potatoes
- 1 cup cooked sausage, crumbled
- 4 eggs
- 1 cup shredded cheese
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Heat olive oil in a skillet over medium heat.
2. Add diced potatoes and cook until golden brown, about 10 minutes.
3. Add cooked sausage to the skillet and stir to combine.
4. Make four wells in the mixture and crack an egg into each well.
5. Cover the skillet and cook until eggs are set, about 5 minutes.
6. Sprinkle shredded cheese over the top and cover until melted, about 2 minutes.
7. Season with salt and pepper to taste. Serve hot.
