- 1 cup Black beans rinsed and drained
- 1 cup Mango diced
- 1 cup Red bell pepper diced
- ¼ cup Red onion finely chopped
- ¼ cup Cilantro chopped
- 1 whole Lime juiced
- 1 tablespoon Olive oil
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
In a large mixing bowl, combine black beans, mango, red bell pepper, red onion, and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately or refrigerate for later.
