Mango Lassi Cheesecake

Crust
- 1.5 cups Graham Cracker Crumbs
- 0.5 cups Melted Butter
Filling
- 16 oz Cream Cheese softened
- 1 cup Greek Yogurt
- 1 cup Sugar
- 3 Eggs
- 1 cup Mango Puree
- 1 teaspoon Cardamom Powder
- 1 teaspoon Vanilla Extract
Preheat oven to 325°F (160°C).
Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
In a large bowl, beat cream cheese until smooth. Add yogurt and sugar, and mix well.
Add eggs one at a time, beating well after each addition.
Stir in mango puree, cardamom powder, and vanilla extract.
Pour the mixture over the crust in the springform pan.
Bake for 60 minutes or until the center is set. Let it cool, then refrigerate for at least 4 hours.
