Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups clam juice
  • 1 cup water
  • 2 cans clams, chopped (6.5 oz each)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onions, celery, and carrots. Cook until softened, about 5 minutes.
  2. Add garlic and cook for another minute.
  3. Add potatoes, diced tomatoes, clam juice, and water. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add clams, thyme, oregano, salt, and pepper. Simmer for another 10 minutes.
  5. Stir in fresh parsley before serving. Enjoy!
