Manhattan Clam Chowder
A hearty and flavorful tomato-based clam chowder.

Main Ingredients
- 2 tablespoon olive oil
- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 2 cloves garlic, minced
- 3 cups potatoes, diced
- 1 can diced tomatoes (14.5 oz)
- 2 cups clam juice
- 1 cup water
- 2 cans clams, chopped (6.5 oz each)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh parsley, chopped
Heat olive oil in a large pot over medium heat. Add onions, celery, and carrots. Cook until softened, about 5 minutes.
Add garlic and cook for another minute.
Add potatoes, diced tomatoes, clam juice, and water. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add clams, thyme, oregano, salt, and pepper. Simmer for another 10 minutes.
Stir in fresh parsley before serving. Enjoy!
