- 1 cup cornmeal
- 1 cup all-purpose flour
- ½ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk
- ¼ cup maple syrup
- ¼ cup vegetable oil
- 2 large eggs
Preheat your oven to 400°F (200°C). Grease or line a muffin tin.
In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
In another bowl, combine the milk, maple syrup, vegetable oil, and eggs. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Divide the batter evenly among the muffin cups.
Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
