Matzo Balls
- 4 large eggs
- 1 cup matzo meal
- 0.25 cup schmaltz (chicken fat) or vegetable oil
- 0.25 cup chicken broth or water
- 1 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 teaspoon baking powder (optional for fluffier balls)
Soup
- 10 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- Fresh dill for garnish
Beat eggs in a bowl.
Add matzo meal, schmaltz, chicken broth, salt, pepper, and baking powder. Mix well.
Refrigerate for 30 minutes.
Boil chicken broth in a large pot.
Form matzo mixture into balls and drop into boiling broth.
Add carrots, celery, and onion.
Simmer for 30-40 minutes.
Garnish with fresh dill before serving.
