Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Kalamata Olives sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 4 large Whole Wheat Tortillas

Instructions 

  1. In a mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.
  3. Pour the dressing over the chickpea mixture and toss to coat evenly.
  4. Lay out the tortillas and spoon the chickpea salad mixture onto each tortilla.
  5. Roll up the tortillas, tucking in the sides as you go, to form a wrap.
  6. Serve immediately or wrap in foil for a portable meal.
