- 3 Eggs
- 2 Tomatoes diced
- 1 Green Bell Pepper chopped
- 1 tablespoon Olive Oil
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
Heat olive oil in a skillet over medium heat.
Add chopped green bell pepper and sauté until soft.
Add diced tomatoes and cook until they soften.
Crack the eggs into the skillet and stir gently to combine with the vegetables.
Season with salt and black pepper to taste. Cook until the eggs are set but still slightly runny.
Serve hot with bread.
