Ingredients 

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Uncooked Rice
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 can Diced Tomatoes
  • 1 cup Shredded Cheddar Cheese
  • 1 packet Taco Seasoning
  • 1 cup Water

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning and water to the beef. Stir and let it simmer for a few minutes.
  4. In a large bowl, combine the cooked beef, uncooked rice, black beans, corn, diced tomatoes, and half of the shredded cheese.
  5. Transfer the mixture to a baking dish and cover with foil.
  6. Bake in the preheated oven for 30 minutes.
  7. Remove the foil, sprinkle the remaining cheese on top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving. Enjoy!
