Ingredients

  • 3 cups Corn kernels fresh or frozen
  • 1 cup Mayonnaise
  • 1 cup Sour cream
  • 1 cup Cotija cheese crumbled
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1 tablespoon Lime juice freshly squeezed
  • 1 cup Cilantro chopped

Instructions 

  1. 1. In a mixing bowl, combine mayonnaise, sour cream, Cotija cheese, chili powder, garlic powder, cumin, and lime juice. Mix well.
  2. 2. Heat a skillet over medium heat and add the corn kernels. Cook until slightly charred, about 5-7 minutes.
  3. 3. Add the charred corn to the mixing bowl and stir to combine.
  4. 4. Fold in the chopped cilantro.
  5. 5. Serve immediately or refrigerate until ready to serve.
