Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • ½ teaspoon Baking soda
  • 1 cup Buttermilk
  • 2 Eggs beaten
  • ¼ cup Butter melted
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Cheddar cheese shredded
  • 1 can Green chilies diced

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking dish.
  2. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and baking soda.
  3. In another bowl, whisk together the buttermilk, eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the corn kernels, cheddar cheese, and green chilies.
  6. Pour the batter into the prepared baking dish and spread it out evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving. Enjoy!
