Mexican Fiesta Pasta Salad

Main Ingredients
- 8 oz Pasta (rotini or fusilli)
- 1 cup Corn kernels (canned or fresh)
- 1 cup Black beans (canned, drained and rinsed)
- 1 cup Cherry tomatoes (halved)
- 1 Red bell pepper (diced)
- 1 Avocado (diced)
- ¼ cup Red onion (finely chopped)
- ¼ cup Cilantro (chopped)
Dressing
- ¼ cup Olive oil
- 2 tablespoon Lime juice
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
1. Cook pasta according to package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine pasta, corn, black beans, cherry tomatoes, red bell pepper, avocado, red onion, and cilantro.
3. In a small bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and black pepper.
4. Pour dressing over the pasta salad and toss to combine.
5. Serve immediately or refrigerate for later.
