- 8 large eggs
- 2 cups tortilla chips broken into pieces
- 1 cup shredded cheese
- 1 jalapeño diced
- 1 tomato diced
- ¼ cup onion diced
- ¼ cup cilantro chopped
- 2 tablespoon butter
- to taste salt and pepper
1. In a bowl, beat the eggs and season with salt and pepper.
2. Heat the butter in a skillet over medium heat.
3. Add the onion and jalapeño, cook until softened.
4. Add the tortilla chips and cook for 2 minutes.
5. Pour in the beaten eggs and cook, stirring gently.
6. Once the eggs are almost set, add the cheese, tomato, and cilantro.
7. Cook until the cheese is melted and the eggs are fully set.
8. Serve hot.
