Ingredients 

Main Ingredients

  • 8 oz Pasta any type
  • 1 tablespoon Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Tomato sauce
  • 1 cup Corn canned or frozen
  • 1 cup Black beans canned, drained and rinsed
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • ½ teaspoon Salt or to taste
  • ¼ teaspoon Black pepper or to taste
  • ¼ cup Cilantro chopped, for garnish

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. Add tomato sauce, corn, black beans, chili powder, cumin, salt, and black pepper. Stir well and cook for 5-7 minutes.
  4. Add cooked pasta to the pan and mix until pasta is well coated with the sauce. Cook for an additional 2-3 minutes.
  5. Garnish with chopped cilantro before serving.
