  • 1 cup long grain white rice
  • 2 tablespoon vegetable oil
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 cup frozen peas and carrots

Instructions 

  1. Heat oil in a saucepan over medium heat. Add rice and cook, stirring frequently, until golden brown.
  2. Stir in tomato sauce, chicken broth, salt, and cumin. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes.
  4. Stir in peas and carrots, cover, and cook for an additional 5 minutes. Fluff with a fork before serving.
