Ingredients

  • 4 cups Corn kernels (fresh, frozen, or canned)
  • ¼ cup Mayonnaise
  • ¼ cup Cotija cheese, crumbled
  • 1 tablespoon Lime juice
  • ¼ cup Cilantro, chopped
  • 1 teaspoon Chili powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. 1. Heat a skillet over medium-high heat. Add the corn kernels and cook until slightly charred, about 5-7 minutes. Stir occasionally.
  2. 2. In a large mixing bowl, combine the charred corn, mayonnaise, Cotija cheese, lime juice, cilantro, chili powder, salt, and black pepper. Mix well.
  3. 3. Serve immediately or chill in the refrigerator for later. Enjoy!
