- 1 large Sweet Potato peeled and thinly sliced
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
1. Peel and thinly slice the sweet potato using a mandoline.
2. Toss the slices in olive oil and salt.
3. Arrange the slices in a single layer on a microwave-safe plate.
4. Microwave on high for 4-5 minutes, or until crispy.
