- 4 cups stale bread, cubed
- 4 eggs beaten
- 1 cup chorizo, diced
- 1 cup bell pepper, diced
- 1 cup onion, diced
- 2 tablespoon olive oil
- to taste salt and pepper
Heat the olive oil in a skillet over medium heat.
Add the chorizo, bell pepper, and onion. Cook until softened.
Add the cubed bread and cook until crispy.
Pour in the beaten eggs and stir until cooked through.
Season with salt and pepper to taste. Serve hot.
