Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold and cubed
  • 0.25 cup sugar
  • 1 pinch salt
  • 1 large egg beaten

Filling

  • 1 cup heavy cream
  • 0.5 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries fresh or frozen

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly. Add the beaten egg and mix until the dough comes together.
  3. Press the dough into a tart pan. Bake for 15 minutes or until golden brown. Let it cool.
  4. In another bowl, whisk together heavy cream, sugar, and vanilla extract until thickened. Spread this mixture over the cooled crust.
  5. Top with mixed berries. Chill in the fridge for at least 1 hour before serving.
