Moroccan Chickpea Stew

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- 1 can diced tomatoes (14.5 oz)
- 1 can chickpeas (15 oz), drained and rinsed
- 2 cups vegetable broth
- 1 carrot, sliced
- 1 zucchini, chopped
- to taste salt and pepper
- ¼ cup fresh cilantro, chopped for garnish
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic, cumin, coriander, cinnamon, and paprika. Cook for another 2 minutes.
Add the diced tomatoes, chickpeas, vegetable broth, carrot, and zucchini. Bring to a boil.
Reduce heat and let simmer for 20-25 minutes, until vegetables are tender.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
