Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 can diced tomatoes (14.5 oz)
  • 1 can chickpeas (15 oz), drained and rinsed
  • 2 cups vegetable broth
  • 1 carrot, sliced
  • 1 zucchini, chopped
  • to taste salt and pepper
  • ¼ cup fresh cilantro, chopped for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, coriander, cinnamon, and paprika. Cook for another 2 minutes.
  4. Add the diced tomatoes, chickpeas, vegetable broth, carrot, and zucchini. Bring to a boil.
  5. Reduce heat and let simmer for 20-25 minutes, until vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
