Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 1 cup red lentils rinsed
  • 1 can chickpeas drained and rinsed
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 cup fresh cilantro chopped
  • 1 cup fresh parsley chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and celery, and cook until softened, about 5 minutes.
  2. Add the garlic, turmeric, cumin, cinnamon, and ginger. Cook for another minute until fragrant.
  3. Stir in the lentils, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Add the chopped cilantro and parsley. Season with salt and pepper to taste. Simmer for another 5 minutes.
  5. Serve hot, garnished with additional fresh herbs if desired.
