Moroccan Vegetable Tagine
A hearty and flavorful Moroccan vegetable stew.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 carrot, sliced
- 1 zucchini, sliced
- 1 can chickpeas, drained and rinsed
- 400 g canned tomatoes
- 500 ml vegetable broth
- 1 cup dried apricots, chopped
- 1 tablespoon honey
- to taste salt and pepper
- ¼ cup fresh cilantro, chopped
Heat olive oil in a tagine or large pot over medium heat.
Add onion and garlic, cook until softened.
Stir in spices and cook for another minute.
Add carrots, zucchini, chickpeas, tomatoes, and vegetable broth. Bring to a boil.
Reduce heat, cover, and simmer for 30 minutes.
Stir in apricots and honey, season with salt and pepper. Cook for another 10 minutes.
Garnish with fresh cilantro before serving.
