Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 1 cup Shredded carrots
  • 1 cup Sliced cucumbers
  • ¼ cup Chopped cilantro
  • ¼ cup Chopped peanuts

Dressing

  • 3 tablespoon Soy sauce
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 1 clove Garlic, minced

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
  2. 2. In a large mixing bowl, combine the cooked noodles, shredded carrots, sliced cucumbers, chopped cilantro, and chopped peanuts.
  3. 3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and minced garlic to make the dressing.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
