Main Ingredients
- 1 cup Orzo uncooked
- 1 cup Cherry Tomatoes halved
- ½ cup Cucumber diced
- ¼ cup Red Onion finely chopped
- ¼ cup Feta Cheese crumbled
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Dried Oregano
- to taste Salt and Pepper
1. Cook the orzo according to package instructions. Drain and let cool.
2. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, and feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Pour over the salad and toss to combine.
4. Season with salt and pepper to taste. Serve chilled or at room temperature.
