Ingredients

  • 200 g Cake flour
  • 200 ml Coconut milk
  • 6 Eggs separated
  • 150 g Sugar
  • 1 teaspoon Pandan extract
  • 1 teaspoon Baking powder
  • ¼ teaspoon Salt

Instructions 

  1. Preheat your oven to 170°C (340°F).
  2. In a mixing bowl, whisk together the egg yolks, sugar, and pandan extract until smooth.
  3. Add the coconut milk and mix well.
  4. Sift in the cake flour, baking powder, and salt. Mix until just combined.
  5. In another bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the batter in three additions.
  7. Pour the batter into a greased baking pan and smooth the top.
  8. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool completely before slicing and serving.
