Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 can cannellini beans, drained and rinsed
  • 1 cup dried pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Pour in the vegetable broth, diced tomatoes, and cannellini beans.
  5. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
  6. Add the dried pasta, oregano, and basil. Cook until the pasta is tender, about 10 minutes.
  7. Season with salt and pepper to taste. Serve hot.
