  • 1 cup pearl couscous
  • 1 ¼ cups water
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions 

  1. Cook couscous in water according to package instructions. Let it cool.
  2. In a large bowl, combine couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  4. Toss to combine. Garnish with fresh parsley.
