Ingredients

  • 4 medium beets
  • 1 cup white vinegar
  • 1 cup water
  • ½ cup sugar
  • ½ teaspoon salt
  • ½ teaspoon whole black peppercorns
  • 2 cloves

Instructions 

  1. Boil the beets until tender, about 30 minutes.
  2. Peel and slice the beets.
  3. In a saucepan, combine vinegar, water, sugar, salt, peppercorns, and cloves. Bring to a boil.
  4. Pour the hot brine over the beets in a jar.
  5. Let cool, then refrigerate for at least 24 hours before serving.
