Ingredients 

Pancake Batter

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup buttermilk
  • 1 egg large
  • 2 tablespoon melted butter

Topping

  • 1 can pineapple slices drained
  • 0.5 cup brown sugar
  • 2 tablespoon butter

Instructions 

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, and melted butter. Pour into dry ingredients and mix until just combined.
  3. In a skillet, melt 2 tablespoon butter over medium heat. Add brown sugar and stir until dissolved.
  4. Place pineapple slices in the skillet and cook for 2-3 minutes on each side until caramelized.
  5. Pour pancake batter over the pineapple slices. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm and enjoy!
