Ingredients

  • 2 cups Pinto Beans cooked
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 can Diced Tomatoes
  • 2 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Vegetable Broth

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and cook until translucent, about 5 minutes.
  3. 3. Add minced garlic and cook for another minute.
  4. 4. Stir in chili powder, cumin, salt, and black pepper.
  5. 5. Add diced tomatoes, pinto beans, and vegetable broth. Bring to a boil.
  6. 6. Reduce heat and simmer for 30 minutes, stirring occasionally.
  7. 7. Serve hot and enjoy!
