  • 2 cups Pinto Beans cooked
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 8 pieces Taco Shells
  • 1 cup Lettuce shredded
  • 1 cup Cheddar Cheese shredded
  • 1 cup Salsa

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, and chili powder. Cook for another minute.
  4. Add the cooked pinto beans and stir to combine. Cook until heated through, about 5 minutes.
  5. Warm the taco shells according to package instructions.
  6. Assemble the tacos by filling each shell with the bean mixture, then topping with shredded lettuce, cheddar cheese, and salsa.
