Ingredients

  • 6 cups kale, chopped
  • 1 cup pomegranate seeds
  • ¼ cup feta cheese, crumbled
  • ¼ cup walnuts, chopped

Dressing Ingredients

  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Instructions 

  1. 1. In a large mixing bowl, combine the chopped kale, pomegranate seeds, feta cheese, and walnuts.
  2. 2. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
