Salad Ingredients
- 6 cups kale, chopped
- 1 cup pomegranate seeds
- ¼ cup feta cheese, crumbled
- ¼ cup walnuts, chopped
Dressing Ingredients
- ¼ cup olive oil
- 2 tablespoon lemon juice freshly squeezed
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- to taste salt and pepper
1. In a large mixing bowl, combine the chopped kale, pomegranate seeds, feta cheese, and walnuts.
2. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
3. Pour the dressing over the salad and toss well to combine.
4. Serve immediately or refrigerate for up to 2 hours before serving.
