Main Ingredients
- 4 pieces Pork chops bone-in
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 cups Carrots sliced
- 2 cups Potatoes diced
- 6 cups Chicken broth
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
- 1 teaspoon Dried thyme
1. In a large pot, heat a bit of oil over medium heat. Add pork chops and cook until browned on both sides. Remove and set aside.
2. In the same pot, add onions and garlic. Sauté until softened.
3. Add carrots and potatoes. Cook for a few minutes, stirring occasionally.
4. Pour in the chicken broth. Add salt, pepper, and thyme. Bring to a boil.
5. Return pork chops to the pot. Reduce heat and simmer for about 30 minutes, or until vegetables are tender and pork is cooked through.
6. Adjust seasoning if needed. Serve hot.
