Ingredients 

Custard

  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup sugar
  • 1 tablespoon flour
  • 6 egg yolks
  • 1 teaspoon vanilla extract

Pastry

  • 1 sheet puff pastry thawed if frozen

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry and cut into 12 circles. Fit the circles into a muffin tin.
  3. In a saucepan, heat the cream, milk, and sugar until the sugar dissolves.
  4. In a bowl, whisk the flour and egg yolks together. Slowly add the hot milk mixture, whisking constantly.
  5. Return the mixture to the saucepan and cook over medium heat until thickened. Stir in vanilla extract.
  6. Pour the custard into the pastry shells and bake for 20-25 minutes, or until the tops are browned.
  7. Let cool before serving.
