Ingredients

  • 4 large potatoes russet
  • 2 tablespoon olive oil
  • 1 cup cheddar cheese shredded
  • 4 slices bacon cooked and crumbled
  • 0.5 cup sour cream
  • 2 tablespoon green onions chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Scrub the potatoes clean and pierce them with a fork. Bake for 45 minutes or until tender.
  3. Let the potatoes cool slightly, then cut them in half lengthwise. Scoop out most of the flesh, leaving a bit to support the skins.
  4. Brush the potato skins with olive oil and place them on a baking sheet. Bake for another 10 minutes until crispy.
  5. Fill the potato skins with cheddar cheese and bacon. Return to the oven until the cheese is melted, about 5 minutes.
  6. Top with sour cream and green onions. Serve immediately.
