Ingredients 

Main Ingredients

  • 3 lbs Chuck Roast
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 tablespoon Tomato Paste
  • 2 cups Carrots chopped
  • 2 cups Potatoes chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Season the chuck roast with salt and pepper.
  2. 2. Heat the pressure cooker and sear the roast on all sides.
  3. 3. Remove the roast and sauté the onion and garlic until soft.
  4. 4. Add the beef broth and tomato paste, stirring to combine.
  5. 5. Return the roast to the pressure cooker, add carrots and potatoes.
  6. 6. Lock the lid and cook on high pressure for 60 minutes.
  7. 7. Let the pressure release naturally, then open the lid.
  8. 8. Serve hot and enjoy!
