Pumpkin Bread Pudding Recipe

- 4 cups bread, cubed day-old or stale
- 1 cup pumpkin puree
- 1 cup milk
- ½ cup heavy cream
- ¾ cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
Preheat oven to 350°F (175°C).
In a mixing bowl, whisk together pumpkin puree, milk, heavy cream, sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt.
Add cubed bread to the mixture and stir to combine. Let sit for 10 minutes to soak.
Pour mixture into a greased baking dish.
Bake for 45 minutes or until set and golden brown.
Let cool slightly before serving.
