  • 2 cups Pumpkin puree
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and garlic, sauté until soft.
  3. 3. Stir in pumpkin puree, chicken broth, and heavy cream.
  4. 4. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Serve hot, garnished with a drizzle of cream or a sprinkle of herbs if desired.
