  • 2 cups Rolled Oats
  • ½ cup Maple Syrup
  • 1 teaspoon Pumpkin Pie Spice
  • 1 teaspoon Vanilla Extract
  • ½ cup Chopped Nuts Optional

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine pumpkin puree, rolled oats, maple syrup, pumpkin pie spice, and vanilla extract.
  3. Fold in chopped nuts if using.
  4. Scoop out spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly.
  5. Bake for 20 minutes or until edges are golden brown.
  6. Allow to cool on a wire rack before serving.
